My neighbor had this closed restaurant with all equipment except pizza making tools. So, I asked him if I could have a go at it...It was kind of a wild shot...it lives 1578 people in Elroy. But it is situated in a beautiful area so...I went ahead and invested in an oven, prep tables etc. I also bought a dough mixer from a closed pizza chain. After having tried to make real dough a couple of times with this mixer, it broke and broke and then broke again...
I called the guy and asked him "How do you make dough with this piece". His answer was " I put the mix in and add water. Press start, 2 minutes later it is ready..."  That is NOT the way we make dough in Europe...

During all the time I have been making pizzas, and by now the amounts of pizzas made, is well exceeding 100.000 pizzas, I have always got compliments like "Can't you come to Stockholm, Berlin, Copenhagen and now Chicago, Baltimore, Kansas City, Madison, Scottsdale etc and show them how to make pizza".

So, as I am not getting any younger I figured it was time to get it all in writing so I created my own Wall of Fame...
