I have worked 20 years in the restaurant and
hotel business in Europe in Sweden, England, Switzerland & Ireland. I have
professionally worked on both sides of the kitchen counter in high end
restaurants and at three pizza restaurants of my own. This knowledge I would like to share with you.
I will teach you the dough recipe I was given 1977 by Signor Rafael from Naples,
Italy as a Thank You for finding a location for his first pizza restaurant in
Sweden. It is still there 32 years later.
Only a handful pizza chefs know this recipe and they are all in Europe.
Being an acknowledged Artist and a professional Pizza Maker, I have taken this
precious recipe to a new level of perfectionism.
Not only will I show you the way of making one of the best dough
recipes in the world, I will also
show you a simple pizza salad, people will beg you for the recipe. (You have to sign a document of confidentiality that never reveal
the recipes you
will learn from me).
You can take this class for different reasons.
Maybe you want to learn a trade you can use wherever
in the world you go or you just want to learn the recipe. Perhaps you want to
have a great pizza party for all your friends and do it the REAL way. Whatever
your purpose is, this is the place where to learn
it all. Remember, when you have learnt it, I can make sure it will work where
you want to set it up. Either it is in
a mall, along a fancy avenue or in your backyard.
Just so you know,
I never show my employees any recipes. As when they leave, they will leave with the recipe and
have the possibility to start up elsewhere. They are also told
that they can never reveal any information from the premises to a curious
guest...

The duration of the class in the school is three days and three days
at your place.

During the three days here, you will learn the
art
of real pizza making
and I will show you how I make the best pizza crust - ever!
I will also show you simple, but quality toppings,
how to put together a menu, marketing, practical knowledge such as how to lay
tables, what equipment you need, taking care of guests, basic Italian cooking, nice desserts (besides ice
cream), wine-, beer and liquor knowledge and more.
I will also show you how to
expand your profit by making bread, the best garlic bread you will ever eat,
lasagna and pasta.
You have thousand questions, I have the answers!
When you are ready to start your own place, either as an addition to your
present business
or from scratch I will be there for you. After you having attended the first part of the
class,
I will help you get started in the choosing of right equipment and supply.
I will also give you my well kept secret on where to get the BEST Tiramisu
ever and if you have a liquor license - I will show you my very liked dessert
called "No Space
left". There are only 4 classes per year, with max
four students per class. This class is only for quality oriented individuals who
wants to take their present business to a new level. But the class is also for
you who want to learn a trade or perhaps for a cutting edge - you can use

The cost for the 3+3 days class is $5500. It gives you
everything mentioned above and while you are here a single room occupancy at an hotel nearby.

$500 down payment is due at sign up. $3500 the week before the class commence and the remaining $1500 at my arrival to your place for the final part of your class. The class dates for 2008 are
